Victoria Sandwich - Whole

Sponge layers sandwiched with vanilla bean mascarpone chantilly and our house raspberry jam. Our version of the queen's sandwich. 
This is a tall cake.

We are currently using some freshly milled wheat in our sponge layers, along with panela sugar, an unrefined cane sugar with caramel notes.

A 8" cake feeds 8 - 10 and a 6" cake feeds 4 - 6.
